DESCRIPTION
Its name comes from "orecchio" in Italian, which means "ear", so here we have orecchiette - or "little ears". A southern Italian pasta from Puglia.
INGREDIENTS Italine durum wheat semolina, water.
STORAGE
Store in a cool, dry place. Once opened, store it in a tightly sealed container.
COOKING IDEA
It is perfect with seafood or any vegetable sauce. Traditional match for orechiette is broccoli, or turnip tops, anchovy and a little bit of chili.
