DESCRIPTION
Trofie is a special variety of short, spindle-shape pasta from the north-western Italian region of Liguria. Trofie is the one of the most loved and appreciated shapes in Liguria, they take their name from the word "strofissià" which, in Genoese dialect means to rub, by the hands movement.
INGREDIENTS Italian durum wheat semolina, water.
STORAGE
Store in a cool, dry place. Once opened, store it in a tightly sealed container.
COOKING IDEA
Traditionally, trofie is cooked with green beans and potatoes and served with basil pesto. It is also delicious with tomato based, creamy or seafood sauces.
