SEASONINGS FOR RECIPE (NOT INCLUDED)
1) Rinse the Mushrooms under the tap and soak the mushrooms for 1 – 1.5 hours.
2) Thaw Scallops, Sea Cucumbers, Fish Maw and Abalone separately. Set the Abalone Braising Sauce aside.
3) When the Mushrooms have softened, drain the water from the Mushrooms into a separate bowl and remove the stems. Set the Mushroom Water aside.
4) Slice the Abalone.

1) In a pot of water, add in Ginger slices and Spring Onions. Bring it to a boil.
2) Blanch the Fish Maw & Sea Cucumber for 5 minutes. Drain and set aside.
3) In a new pot, add in Ginger slices and Spring Onions. Stir fry till it's fragrant. Then, add in the Mushrooms.
4) Pour in Abalone Braising Sauce，500ml of Mushroom Water, 500ml of Clear Broth with a dash of Chinese Cooking Wine and let it simmer for 30 minutes.
5) Add Fish Maw and let it simmer for 30 minutes. Then, add in the Sea Cucumber and let it simmer for another 15 minutes.
6) Then, add in Abalone slices and Scallop. Let it simmer for 5 minutes.
7) Season to taste with Oyster Sauce, Salt or Sugar.
